The CD-1 honey concentrator was structured according to a new principle that includes tubular units and a liquid guide ring, which combines vacuum suction and ultrasonic decrystallization of honey. To reduce the time and cost for the design and manufacture of the concentrator, we have applied the modeling and simulation method of the moisture heat exchange process in the condensing chamber by mathematical functions based on the theory of moisture-heat exchange between the concentrated solution and the heat-carrying and endothermic medium. The model determined several parameters on the structure and mode of concentration to orient the design of the concentrator.
